We’ve just finished another four days at iStill University. It went really well. The kind of week that reminds you why you run these courses in the first place.
There was distilling, of course. People worked in pairs on the Minis, explored botanicals and developed their own drinks. We brought the group together around the iStill 500. There were questions, experiments and plenty to taste.
But the thing we keep coming back to is the people.

The part that doesn’t fit in a curriculum
You can explain how to make cuts in a lesson. Sitting beside someone, smelling the same fraction and comparing what you notice is another kind of learning.
Then there’s lunch. And the group dinner. Time to talk about what you’re making, what you’re planning and what you still haven’t figured out.
We regularly see people stay in touch after a course. They share knowledge, support each other’s projects and become friends. Those connections matter to us. They’re one of the best things about bringing everyone here.

Prepare online. Bring it to life here.
Our Online Distilling Course gives you the theoretical foundation, taught by Odin. It’s free, and you can work through it at your own pace.
The Hands-On Distilling Course is where you apply it: four days at our dedicated University training location in Woerden, in the Netherlands. Real equipment, your own recipes and guidance from our experienced iStill teacher.
We recommend the online course as preparation. You don’t have to finish it before attending, and you don’t need a paid ticket to access it. We want you to arrive curious and ready to take part.
We’re doing it again in 2027.
We’re considering two editions:
- 15–18 March 2027 · proposed
- 19–22 April 2027 · proposed
The waitlist is open.
Tell us which date you’re interested in, or ask to hear about both. The iStill team will be in touch when the dates and final price are confirmed.
Please budget around €3,000 per person, excluding VAT. That’s an indicative 2027 price, not the final fee. Lunches, one group dinner and taxi transfers between a preferred hotel and iStill HQ are included. Travel, accommodation and airport transfers are separate.
Joining the waitlist is free. It isn’t a booking or a reserved place, and there’s no payment commitment.
Come with a question.
Maybe you’re working towards your first distillery. Maybe you already make spirits and want to understand your process better. Maybe there’s a recipe you can’t leave alone.
That’s a good place to start. We’d love to meet you.
