iStill University has taught distillers since 2015. The idea behind every distilling course is simple: if you understand the rules behind mashing, fermentation, distillation, extraction, aging, tasting, and recipe development, you can make better spirits on purpose.

That is why the free online Craft Distiller Course and the paid on-site course belong together. The online course explains the theory. The on-site course brings that theory into the room with real equipment, instructor feedback, product samples, and practical application.

Exact runs can shift with the group and the equipment schedule, but the week is designed to connect the same core pieces every distiller needs: fermentation, flavor, cuts, extraction, repeatability, and operator confidence.

Day 1

From theory to production floor

Align on goals, cover the core science, connect it to real equipment, and begin the practical framework for fermentation, flavor, and distilling control.

Day 2

Mashing, fermentation, and flavor creation

Work through the decisions that shape flavor before distillation: raw materials, yeast behavior, esterification, temperature, pH, and process control.

Day 3

Distillation, extraction, and product feedback

Run practical distillation and botanical extraction work, taste fractions, discuss cuts, and review existing product samples from participants.

Day 4

Operating iStill equipment with confidence

Translate the week into daily operation: equipment setup, program choices, repeatable recipes, troubleshooting, and next steps for your own production.

Questions before you request a seat.

Is this the same as the free online course?

No. The online course is the free self-paced foundation. The on-site course is the practical version at iStill HQ, where we also cover the basics and then apply the theory on equipment, with instructors, samples, and feedback.

Do I need to complete the online course first?

No. It helps if you have taken the free online course or are already familiar with basic distilling concepts, but the on-site course also covers the essentials before moving into hands-on work.

Can I bring my own spirits for feedback?

Yes. Bring samples if you already produce. Product feedback is one of the most valuable parts of the training because it connects theory to your real flavor goals.

Can you train our team privately?

Yes. Use the private training option in the form for group training, staff onboarding, equipment-specific coaching, or one-on-one guidance.

Do I need a big beard to attend the course?

No. Big curiosity helps more. Beards are optional; attention, good questions, and a willingness to taste critically are the useful parts.
