Introduction

Wanna learn why vapor speeds matter to a craft distiller? Please read the link underneath. And when you are done ... let's dive in deeper. From "vapor speed" to "vapor speed control". That's what this iStill Blog post is about.

The concept

When producing taste-rich spirits, vapor speeds matter tremendously. Higher vapor speeds smear more fruity, headsy flavors as well as more rooty, nutty, tailsy flavors into your hearts faction. That means that controlling and managing vapor speeds allows you to influence the taste composition of the drinks you make. Please find some examples underneath:

  • Whisky is a three-dimensional drink. Therefore the smearing of both heads- and tails-associated flavors is essential. Whisky benefits from high vapor speeds during the distillation run. And so does high-ester rum.
  • Medium and light rums benefit from medium respectively low vapor speeds. The lower vapor speeds result in a better separation between cuts, less smearing, and a more one-dimensional, substrate-oriented flavor.
  • Gin is a 2 or 2.5 dimensional drink. A small heads cut allows for
